Ingredients

  • 1 cup quinoa
  • 0.5 cup blueberries
  • 0.5 cup strawberries
  • 0.25 cup almonds
  • 0.25 cup walnuts
  • 1 tablespoon lemon juice
  • 2 tablespoons maple syrup
  • 0.5 teaspoon cinnamon
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 cup almond milk

Instructions

  1. 1Rinse the quinoa under cold water until the water runs clear.
  2. 2In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil.
  3. 3Reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is fluffy and water is absorbed.
  4. 4While the quinoa is cooking, toast the almonds and walnuts in a dry skillet over medium heat until fragrant, about 3 minutes.
  5. 5In a small bowl, whisk together lemon juice and maple syrup.
  6. 6Fluff the cooked quinoa with a fork and divide between bowls.
  7. 7Top each bowl with blueberries, strawberries, toasted almonds, and walnuts.
  8. 8Drizzle the lemon-maple mixture over each bowl.
  9. 9Sprinkle with cinnamon, chia seeds, and flaxseeds.
  10. 10Serve immediately with a side of almond milk.
