  • 2 cups wheat flour
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup olive oil
  • 1 cup milk
  • 1 cup feta cheese
  • 0.5 cup olives
  • 0.5 cup sun-dried tomatoes
  • 1 cup spinach
  • 1 teaspoon oregano
  • 0.5 teaspoon salt

Instructions

  1. 1Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. 2In a large bowl, mix together the whole wheat flour and baking powder.
  3. 3In another bowl, beat the eggs lightly and then mix in the olive oil and milk.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. 5Fold in the feta cheese, chopped olives, sun-dried tomatoes, spinach, and oregano.
  6. 6Season with salt, remembering that feta and olives add natural salinity.
  7. 7Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  8. 8Bake for 25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
