Spinach and Feta Rolls

Ingredients
- 200 grams grain phyllo dough
- 300 grams spinach
- 150 grams feta cheese
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 large eggs
- 0.25 teaspoons nutmeg
- 0.5 teaspoons peppers
- 2 tablespoons dill
- 1 teaspoon lemon zest
Instructions
- 1Preheat the oven to 375°F (190°C). Lightly oil a baking sheet.
- 2In a large skillet, heat 1 tablespoon olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
- 3Add spinach to the skillet, cooking until wilted. Let it cool, then squeeze out excess moisture.
- 4In a mixing bowl, combine the wilted spinach, crumbled feta cheese, beaten egg, nutmeg, black pepper, finely chopped dill, and lemon zest.
- 5Lay out a sheet of whole grain phyllo dough on a clean surface. Brush lightly with olive oil, then place another sheet on top. Repeat this step to have a layered base.
- 6Place a portion of the spinach and feta mixture along one edge of the phyllo dough.
- 7Roll the dough tightly around the filling, then place the roll on the prepared baking sheet. Brush the top with a little olive oil.
- 8Repeat the process with the remaining dough and filling.
- 9Bake in the preheated oven until the rolls are golden and crispy, about 25-30 minutes.
- 10Let the rolls cool slightly before serving.
- 11Serve the rolls warm, optionally with a side of Greek yogurt or tzatziki sauce for dipping.
