A classic Italian dessert reimagined with health and Mediterranean principles in mind. Each cup layers coffee-soaked ladyfingers with a light mascarpone cream, enriched with the natural sweetness of honey and the robust flavor of espresso, all dusted with a fine cocoa powder.

Ingredients

  • 1 cup espresso
  • 24 pieces ladyfingers
  • 8 ounces mascarpone cheese
  • 3 large eggs
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey
  • 1 ounce dark chocolate

Instructions

  1. 1Prepare espresso and let it cool to room temperature.
  2. 2Separate egg whites and yolks into two bowls.
  3. 3Beat egg yolks with honey and vanilla extract until light and fluffy.
  4. 4In another bowl, gently fold mascarpone cheese into the egg yolk mixture.
  5. 5Beat egg whites until stiff peaks form, then fold into the mascarpone and egg yolk mixture.
  6. 6Dip ladyfingers quickly into the espresso, ensuring they are moist but not soggy.
  7. 7Layer the soaked ladyfingers at the bottom of each cup.
  8. 8Spoon a layer of the mascarpone mixture over the ladyfingers.
  9. 9Repeat the layering process until cups are filled, finishing with a mascarpone layer.
  10. 10Dust the top with cocoa powder.
  11. 11Shave dark chocolate over the top for garnish.
  12. 12Chill in the refrigerator for at least 2 hours before serving.
