Ingredients

  • 200 g tuna
  • 400 g cannellini beans
  • 150 g cherry tomatoes
  • 100 g cucumber
  • 50 g red onion
  • 20 g parsley
  • 2 tbsp olive oil
  • 1 whole lemon
  • 1 tsp black pepper
  • 0.5 tsp sea salt

Instructions

  1. 1Drain the canned tuna and cannellini beans, rinsing the beans under cold water to remove any excess sodium.
  2. 2Halve the cherry tomatoes.
  3. 3Dice the cucumber and thinly slice the red onion.
  4. 4In a large bowl, combine the tuna, beans, cherry tomatoes, cucumber, and red onion.
  5. 5Chop the fresh parsley and add to the salad mixture.
  6. 6In a small bowl, whisk together the extra virgin olive oil, juice of one lemon, black pepper, and sea salt to create the dressing.
  7. 7Pour the dressing over the salad and gently toss until everything is well coated.
  8. 8Let the salad sit for 5 minutes to allow the flavors to meld together.
  9. 9Taste and adjust seasoning if necessary.
  10. 10Serve the salad chilled or at room temperature.
  11. 11Garnish with extra parsley leaves before serving.
