  • 1 head lettuce leaves

  • 1 lb turkey
  • 1.5 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp ground chipotle chile pepper
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 medium roma tomatoes
  • 1 medium bell pepper
  • 0.5 cup fresh corn kernels
  • 1 medium avocado
  • 2 tbsp lime juice
  • 0.5 cup plain nonfat yogurt
  • 1 tbsp fresh chives
  • 0.5 cup cucumber
  • 1 tsp cider vinegar

Instructions

  1. 1Heat extra virgin olive oil in a large pan over medium-high heat. Add ground turkey and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  2. 2Stir in ground cumin, paprika, ground chipotle chile pepper, oregano, salt, and black pepper into the cooked turkey. Cook for 2-3 minutes, stirring occasionally, until the spices are fragrant.
  3. 3While the turkey cooks, prepare the toppings: Dice the roma tomatoes, bell pepper, cucumber, and avocado.
  4. 4In a small bowl, combine the plain nonfat yogurt with 1 tablespoon of lime juice, cider vinegar, and chopped fresh chives. Stir well to create a creamy sauce.
  5. 5To serve, spoon the seasoned turkey mixture into individual lettuce leaves.
  6. 6Top the turkey with the diced tomatoes, bell pepper, fresh corn kernels, and avocado.
  7. 7Add a dollop of the prepared yogurt sauce over the toppings.
  8. 8Finish with an extra squeeze of the remaining lime juice over each wrap before serving.
