Ingredients

  • 2 cups portobello mushrooms
  • 2 cups oyster mushrooms
  • 2 pieces bell pepper
  • 2 pieces onion
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bunch cilantro
  • 1 piece avocado
  • 8 pieces wheat tortillas

Instructions

  1. 1Prep the mushrooms by slicing them into thin strips.
  2. 2Slice the bell peppers and onions into similar thin strips.
  3. 3In a large pan, heat the olive oil over medium heat.
  4. 4Add the garlic and sauté for about 1 minute until fragrant.
  5. 5Add the mushrooms, bell peppers, and onions to the pan. Cook for approximately 10 minutes, or until the vegetables are tender.
  6. 6Season the vegetables with cumin, paprika, black pepper, and salt. Stir well to combine.
