Ingredients
- 1 cup quinoa
- 2 cup water
- 15 ounce cannellini beans
- 1 large cucumber
- 2 roma tomatoes
- 0.5 cup feta cheese
- 14 ounce artichoke heart quarters
- 0.25 cup onion
- 0.25 cup parsley
- 2 tbsp fresh mint
- 0.5 red bell pepper
- 0.25 cup extra virgin olive oil
- 3 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tsp oregano
- 0.5 tsp granulated garlic
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- 1Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Fluff with a fork and let cool completely.
- 2While quinoa cools, dice cucumber, Roma tomatoes, onion, and red bell pepper. Chop artichoke heart quarters and rinse the cannellini beans.
- 3In a small bowl, whisk together extra virgin olive oil, lemon juice, Dijon mustard, dried oregano, granulated garlic, salt, and pepper until well combined.
- 4In a large bowl, combine the cooled quinoa, diced cucumber, Roma tomatoes, onion, red bell pepper, cannellini beans, chopped artichoke hearts, crumbled feta cheese, fresh parsley, and fresh mint.
- 5Pour the prepared dressing over the salad ingredients. Toss gently to ensure all components are evenly coated. Serve chilled or at room temperature.
