Ingredients
- 4 count egg whites
- 1 cup sugar
- 0.5 teaspoon cream of tartar
- 0.25 teaspoon kosher salt
- 1 teaspoon vanilla bean paste
- few drops red food coloring
- few drops green food coloring
- 0.25 cup sweetened coconut
- 0.25 cup dark chocolate chips
- 2 tablespoons pine nuts
Instructions
- 1Preheat oven to 200°F (95°C) and line baking sheets with parchment paper.
- 2In a clean, dry bowl, whip egg whites with cream of tartar and kosher salt on medium-high speed until soft peaks form.
- 3Gradually add sugar, one tablespoon at a time, continuing to whip until stiff, glossy peaks form. Fold in vanilla bean paste, food coloring, sweetened coconut, and dark chocolate chips.
- 4Pipe or spoon meringue onto prepared baking sheets. Sprinkle with pine nuts if using.
- 5Bake for 1.5 to 2 hours, or until meringues are dry, crisp, and easily lift off the parchment. Turn off oven and let them cool completely inside for extra crispness. Serve with lime and lemon wedges.
