Quick Chicken and Zucchini Basil Stir-Fry

Ingredients

  • 1 lb chicken breast
  • 2 tbsp extra virgin olive oil
  • 1 shallot
  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 2 medium courgettes
  • 1 tsp sea salt
  • 0.5 tsp coarsely ground pepper
  • 0.25 cup fresh basil
  • 1 tbsp dark sesame oil
  • 1 tsp honey
  • 1 tsp arrowroot powder
  • 0.25 cup water
  • 2 cups cooked brown rice

Instructions

  1. 1Heat olive oil in a large skillet or wok over medium-high heat. Add chicken strips and stir-fry until cooked through and lightly browned. Remove chicken and set aside.
  2. 2Add shallot, garlic, and ginger to the skillet, stir-fry for 1 minute until fragrant. Add green and yellow bell peppers and courgettes, stir-fry for 3-5 minutes until tender-crisp.
  3. 3Return chicken to the skillet. Season with sea salt and coarsely ground pepper.
  4. 4In a small bowl, whisk together dark sesame oil, honey, arrowroot powder, and water. Pour the sauce over the chicken and vegetables, stirring constantly until the sauce thickens.
  5. 5Stir in the fresh basil just before serving. Serve immediately over cooked brown rice.
