Ingredients
- 4 chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp smoked paprika
- 2 tbsp garlic-infused oil
- 0.5 cup chicken broth
- 0.25 cup lemon juice
- 1 tsp lemon peel
- 0.5 cup black olives
- 1 sprig rosemary
- 0.25 cup basil
- 1 tsp oregano
- 2 tbsp fresh chives
- 1 tbsp red wine vinegar
- 2 tbsp parsley
Instructions
- 1Season chicken thighs with salt, pepper, and smoked paprika. Heat extra virgin olive oil in a large skillet over medium-high heat. Sear chicken until deeply golden and crispy on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- 2Reduce heat to medium. Add Garlic-Infused Oil to the skillet, then deglaze with low-sodium chicken broth, lemon juice, and red wine vinegar, scraping up any browned bits. Stir in lemon peel, black olives, rosemary, dried oregano, and half of the fresh chives. Bring to a gentle simmer.
- 3Return seared chicken thighs to the skillet, nestling them into the sauce. Cover and cook for 5-7 minutes, or until chicken is cooked through (internal temperature 165°F/74°C).
- 4Remove lid, increase heat slightly, and simmer sauce for a few minutes to thicken if desired.
- 5Garnish with remaining fresh basil, chives, and fresh parsley before serving.
