Ingredients

  • 1 lb ground lamb
  • 1 tbsp fresh rosemary
  • 2 tbsp fresh chives
  • 1 tbsp garlic-infused oil
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 8 large lettuce leaves
  • 1 cup cucumber
  • 0.5 cup feta cheese
  • 2 tbsp fresh mint

Instructions

  1. 1In a bowl, combine ground lamb with rosemary, chives, Garlic-Infused Oil, oregano, 1 tsp salt, and 1/2 tsp black pepper. Form into four patties.
  2. 2Heat 1 tbsp extra virgin olive oil in a skillet over medium-high heat. Cook lamb patties for 4-5 minutes per side, or until desired doneness.
  3. 3While burgers cook, prepare the relish: In a separate bowl, mix diced cucumber, crumbled feta cheese, chopped mint, 1 tbsp extra virgin olive oil, a pinch of salt, and a pinch of black pepper.
  4. 4Serve the cooked lamb burgers on lettuce leaves, topped generously with the cucumber and feta relish. Accompany with cooked quinoa.
