Delicate Poached Salmon with Aromatic Cream Sauce

Ingredients
- 4 fillets salmon fillets
- 4 cups water
- 1 tsp salt
- 1 small shallot
- 2 tbsp unsalted butter
- 1 cup double cream
- 0.25 cup creme fraiche
- 2 tbsp fresh chives
- 1 tsp parsley flakes
- 1 lb green beans
- 1 tbsp arrowroot powder
- 2 tbsp water
- 1 pinch fleur de sel
- 4 leaves butter lettuce
- 2 cups cooked long grain rice
Instructions
- 1In a large pan, combine 4 cups water, 1 tsp salt, and the finely minced shallot. Bring to a gentle simmer. Carefully add the salmon fillets and poach for 8-10 minutes, or until just cooked through. Remove salmon and set aside on a warm plate.
- 2Increase heat and reduce the poaching liquid slightly. Whisk in the unsalted butter, double cream, and creme fraiche, stirring until well combined and heated through.
- 3In a small bowl, combine the arrowroot powder with 2 tbsp water to form a smooth slurry. Gradually whisk this slurry into the simmering cream sauce. Continue to cook, stirring constantly, until the sauce thickens to your desired consistency.
- 4Remove the sauce from heat. Stir in the chopped fresh chives and parsley flakes. Season the sauce with a pinch of fleur de sel to taste.
- 5Serve the poached salmon fillets immediately, generously topped with the aromatic cream sauce. Accompany with steamed green beans, cooked long grain rice, and fresh butter lettuce leaves.
