Pan-Seared Haddock with Parsley Butter and Green Beans

Ingredients
- 2 fillets haddock fillets
- 2 tbsp canola oil
- 5 tbsp unsalted butter
- 3 tbsp parsley
- 1.5 cups green beans
- 1 tsp salt
- 0.5 tsp garlic powder
- 0.25 cup water
- 1 tsp lemon rind
- 1 medium shallot
- 1 tbsp fresh chives
- 1 tsp rice vinegar
- 0.5 tsp garlic paste
- 0.25 tsp fleur de sel
- 2 tbsp cream
- 1 tbsp safflower oil
Instructions
- 1Pat haddock fillets dry, season with 0.5 tsp salt and garlic powder. Heat Canola Oil in a skillet over medium-high heat. Pan-fry fillets for 3-4 minutes per side, until golden and cooked through. Remove and keep warm.
- 2In the same skillet, melt 2 tbsp unsalted butter. Sauté minced shallot and garlic paste for 1 minute. Remove from heat, stir in remaining 3 tbsp unsalted butter, chopped parsley, chives, cream, grated lemon rind, and rice vinegar until well combined.
- 3In a separate pot, combine green beans, water, and Safflower Oil. Bring to a simmer, cover, and steam for 5-7 minutes until tender-crisp. Season with remaining 0.5 tsp salt.
- 4Serve pan-fried haddock fillets topped generously with the parsley butter. Arrange steamed green beans alongside. Finish with a sprinkle of fleur de sel.
