Ingredients

  • 3 lbs pork loin roast
  • 1 medium head cabbage
  • 2 lbs yams
  • 2 tbsp canola oil
  • 2 tbsp unsalted butter
  • 1 large shallot
  • 1 tsp garlic powder
  • 1.5 tsp salt
  • 1 cup bone broth
  • 1 tbsp parsley flakes
  • 1 cup green beans
  • 1 cup brussels sprouts
  • 1 tbsp arrowroot powder
  • 0.5 cup water
  • 0.25 cup cream

Instructions

  1. 1Preheat oven to 375°F (190°C). Pat pork roast dry, rub with 1 tbsp Canola Oil, garlic powder, and 1 tsp salt. Sear pork in a large oven-safe pot or Dutch oven over medium-high heat until browned on all sides.
  2. 2Add remaining 1 tbsp Canola Oil and Unsalted butter to the pot. Sauté shallot until softened. Add cabbage, yams, green beans, Brussels sprouts, and remaining 0.5 tsp salt around the pork. Pour in Bone Broth.
  3. 3Roast in the preheated oven for 60-90 minutes, or until pork reaches an internal temperature of 145°F (63°C) and vegetables are tender.
  4. 4Remove pork and vegetables from the pot, cover loosely, and let rest. For gravy, whisk Arrowroot powder with Water, then stir into pan drippings over medium heat until thickened. Stir in Cream and Parsley flakes.
  5. 5Slice pork and serve with roasted vegetables and gravy.
